Green Eggs and Ham

Everyone loves Dr. Seuss. Everyone loves green eggs and ham. If you’ve tried them at least.

This recipe necessitates pesto. That’s how my eggs are green. It’s a fun surprise for kids, and a good laugh for anyone else. Finally, its delicious.

I made this recipe like a breakfast sandwich, but you can make just the eggs with ham if you like. I used prosciutto. Do what makes you happy. Let’s get started!

You’ll need:

  • Slice of bread or bagel
  • prosciutto or ham of your choice
  • several slices of tomato
  • mozzarella cheese
  • an egg

For THE SAUCE:

  • pesto

Directions:

  1. Toast your bread/bagel with prosciutto, tomato, and cheese so that it melts all over the rest of your ingredients.
  2. Make an egg sunny side up. Serve it on top of your toast. Finally, cover your yoke with pesto- very carefully! This presentation is simply for aesthetic reasons, then  you can smush it around like I did and enjoy the soft yoke mixed with pesto….mmmmm!
