This recipe necessitates pesto. That’s how my eggs are green. It’s a fun surprise for kids, and a good laugh for anyone else. Finally, its delicious.
I made this recipe like a breakfast sandwich, but you can make just the eggs with ham if you like. I used prosciutto. Do what makes you happy. Let’s get started!
- Slice of bread or bagel
- prosciutto or ham of your choice
- several slices of tomato
- mozzarella cheese
- an egg
For THE SAUCE:
- Toast your bread/bagel with prosciutto, tomato, and cheese so that it melts all over the rest of your ingredients.
- Make an egg sunny side up. Serve it on top of your toast. Finally, cover your yoke with pesto- very carefully! This presentation is simply for aesthetic reasons, then you can smush it around like I did and enjoy the soft yoke mixed with pesto….mmmmm!
